JB Restaurant

JB Restaurant is the story of the Bratovž family, rooted in a love of cooking and shared work that has bound them together for more than three decades. Its beginnings trace back to 1992, when Janez Bratovž returned from five years of training abroad and laid the foundations of what would become one of the first chapters of modern Slovenian cuisine. From their home on Miklošičeva Street, beneath a Plečnik façade, JB spent decades shaping the face of Slovenian gastronomy — and became the first restaurant from Slovenia to earn a place on The World’s 50 Best Restaurants list.

In May 2026, after decades on Miklošičeva, JB moved to the foothills of the Kamnik–Savinja Alps, to Golf Resort Arboretum, where the seasons enter the space more directly than ever before. The story continues, with Tomaž and Nina at its helm. Tomaž leads the kitchen with a quiet attentiveness to the ingredient and a precision that has deepened with the years. Nina, an Advanced Sommelier, oversees the wine list and that barely perceptible rhythm — between kitchen and guest — that defines great service.

The family’s founding principles remain unchanged. The kitchen begins with the ingredient and the season; technique is in the service of flavour. A personal approach returns to the guest something increasingly rare: time. The new setting has brought a new menu and a wine list that stretches from neighbouring producers to the great houses of the wider world, yet the foundation is the same as it was on the first day. A great ingredient has a voice worth hearing. The guest comes first.

Chef Tomaž Bratovž

Tomaž entered the JB kitchen young, in the years when the restaurant was still finding its voice. Beside his father he learned the fundamentals, which over time crystallised into a hand that is distinctly his own — first searching and attentive, later assured and recognisable. The knowledge that only a kitchen can give grew from the daily rhythm of that kitchen.

His cooking is modern and precise, always anchored in Slovenian produce and a domestic culinary tradition he reads with fresh eyes. As a member of JRE — Jeunes Restaurateurs d’Europe — he is part of an international community of the next generation of chefs shaping contemporary European gastronomy. In Slovenia, he is known as a cook who places classical dishes in a new light, while honouring the spirit in which they were first conceived.

Since early 2025 he has led the JB kitchen in full. The menu now carries his hand and his tempo — his decisions about how each season should be translated onto the plate. He cooks with precision, stillness, and a deep trust in the ingredient. A dish, for Tomaž, is formed slowly, in dialogue with what each particular day has to offer.

Sommelier Nina Bratovž

Nina chose her path to JB herself. After studying pharmacy, she returned to the family table and gradually discovered that wine was the language that suited her. Over the years she attained the title of Advanced Sommelier, and in 2024 was named JRE Sommelier of the Year in Paris.

For Nina, wine is the story of a soil, a season, and a producer who believed in their grapes. In every glass she looks for a narrative that will find its register alongside the food. She holds that passion is the flavour we sense before we know the name of the grape.

At JB she oversees the wine list, the service, and that almost imperceptible tempo between the kitchen and the table. She carries Slovenian wine into the world as an ambassador — connecting producers across Slovenia, Europe, and beyond — while at home she leads an initiative placing women and wine in the same conversation. Her approach to the guest is quiet and focused: the glass on the table becomes part of the exchange, an equal voice alongside the food.
